Transport properties of vitamin B1 in binary aqueous solutions of D-glucose

Abstract

The present study reports experimental values of viscosities and activation parameters for
vitamin B1 in binary aqueous solutions of D-glucose (D-glu) at variable temperature range. The
relative viscosities are used to calculate A and B parameters of Jones-Dole equation. Feakins
transition- state theory has also been used to determine the activation parameters. Results
obtained are interpreted in terms of structure factor and molecular interactions (in the framework
of structure-making and structure-breaking) in aqueous solutions. It has been found that
vitamin B1is structure breaker in binary aqueous solutions of D-glu.
